Raw Almond Flour Coconut Cookies

Try these tasty almond flour and coconut cookies.  A simple recipe that will have your friends and family begging for more.with simple ingredients, these cookies are not to sweet and adelightful treat that you wion't feel guilty for having more than one.

Ingredients

  • 2 cups raw almond flour. I find they are best if you just take Raw, non-GMO grown organic almonds and put them in a blender. Keep blending until they are a nice powdery consistency with some chunks in there... Use your own judgement,
  • 1.5 to 2 teaspoons baking powder. I want the cookies to be light and airy, a bit on the higher side will get you there. Less baking powder and the cookies may get more dense and crispy.
  • 1 to 1.5 teaspoons baking soda. This too contributes to the density of the cookies; more will make the cookies chewy and less will make the hard.
  • 1 teaspoon salt
  • 3 cups UN-sweetened shredded coconut
  • 1 stick or half cup of unsalted butter softened a bit to make it easier to mix
  • 1 full cup of packed light brown sugar. This is the only sweetener so you may want a little more.
  • 2 large eggs
  • 1.5 to 2 teaspoons vanilla extract - may seem like a lot, but i like the flavor it adds.
  • 1 teaspoon coconut extract :)

Preheat oven to 350ºF.
In a medium size bowl, combine the flour, baking soda, baking powder, salt, and coconut. I just use a fork.
In a separate medium size bowl combine the butter and brown sugar, eggs, vanilla and coconut extract, and beat until smooth. Some people use mixers, i just do it by hand with a fork. Once i used a paddle attached to my Dewalt drill. That was fun.
Once you have the texture, start adding the dry ingredients. keep mixing until all is combined and you have something that represents cookie dough. It should be able to clump together nicely.

I like to use a non-stick baking spray on the cookie sheets or i use parchment paper lined cookie sheets.  Either way, drop some dough on the sheets in globs the size of a 50 cent piece.  Space the rounded balls out on the baking sheet about an inch and a half apart.  I get about nine on a sheet.  They will flatten out a bit and you will know after the first sheet comes out if you made them too big or too small. Bake for 11 minutes.  As long as they look evenly cooked, they will be fine. You may need a minute or 2 more to get them as cooked as you like.  Remove and allow to cool on the baking sheet for a bit before moving to a tray or wire rack.

Have one while warm.  Add chocolate chips too if you want the almond joy experience. Makes about 36 cookies.
