Almond Crusted Chicken Fingers


-1 ounce/snack pack AlmondRX (fortified with Vitamin D3), ground or chopped

-1 pound chicken tenders

-1/4 cup all-purpose flour

-2 eggs, lightly beaten


1. Preheat the oven to 350 degrees F (175 C). Line a baking sheet with parchment paper and set aside.

2. Place the ground or chopped almonds on a plate and set aside. Place the all-purpose flour in another shallow bowl, followed by the beaten eggs in a third shallow bowl.

3. Dip each chicken tender first into the flour to lightly coat it, then dip into the egg mixture until coated on both sides and finally dip into the almond mixture until completely coated.

4. Place chicken tenders on prepared baking sheet and bake in preheated oven for 20 minutes or until golden brown and cooked through when tested with a thermometer inserted into the thickest part of the chicken tender (internal temperature should read 165 F).

5. Serve with your favorite dipping sauce and enjoy! Enjoy!
