Almond Flour Pancakes


-1 ounce/snack pack AlmondRx (fortified with Vitamin D3), ground or chopped

-1 cup all-purpose flour

-1 tablespoon baking powder

-pinch of salt


1. In a medium bowl, combine the ground or chopped almonds, all-purpose flour, baking powder and salt. Whisk until everything is evenly incorporated.

2. Heat a large nonstick skillet over medium heat. Grease with oil or butter if desired.

3. Pour a small amount of batter into the hot pan, enough to make a pancake about 4 inches in diameter. Let cook for 2 minutes then flip and let cook an additional 1-2 minutes on the other side until golden brown on both sides and cooked through in the center. Repeat with remaining batter.

4. Serve with your favorite toppings such as fresh fruit, syrup, nut butter or honey. Enjoy!
